Better not be Holstein's - I love that place! :)

Here are my thoughts:
Blue Ribbon Sushi - seems to be packed every time I've been.

China Poblano - I have really enjoyed some great food here. I hope it doesnt go, it is the perfect pre-game meal before slutting yourself out to Marquee next door.

Comme Ca - What's this?

D.O.C.G. - What's this (part duex)?

Estiatorio Milos - I feel like this place will hang around. Its waaaaaaaaaaaaaaaaaaaaaaaaaaay over priced, but its good for business meetings and private events.

Holsteins - Again, the drunken skanks about to hit Marquee will keep this place alive and well.

Jaleo - Great food. Lots of celebrity sitings. Gotta be good another 5 years.

Secret Pizza - Pizza is a casino revenue dream. Selling a slice for $5 when it costs less than $1 to make? No way this place is going anywhere.

STK - To much backing with NY restaurant, there to stay.

The Henry - Ideal location for an unknowing tourist waltzing through to get raped by the hiked prices.

Va Bene Caffe - Hidden and not a tourist getter. Coffee makes tons of profit, but people won't go unless they can find it. That's why Bellagio's coffee shop below the skywalk to Ballys is doing great.

Wicked Spoon - Again, tough location, but every hotel needs the staple buffet. Unless Cosmo wants to be "the right amount of wrong" and go anarchy on the buffet. Doubtful.

I don't like sushi. But last time we were in Vegas we stood outside Blue Ribbon for probably 15 minutes just watching those dudes chop that sushi. They had a little show they did with it and kept the rolls and rice coming out at a rapid pace. It was fun just standing there watching.
