SBE Plans Umami Burger For Vegas... But Where?

A few months ago, in the wake of the Sahara closure, SBE Entertainment's head toolsmith Sam Nazarian announced an investment into local Los Angeles burger joint Umami Burger. In the last three years or so, Umami has gathered up a dedicated following amongst foodies and opened three more locations in the city with plans for more. I've eaten there numerous times... long lines for a good burger, good beer, incredibly over priced.

Thanks to this profile of Umami Burger in the Los Angeles Times, we now know that Umami, headed by Adam Fleischman, and Nazarian's SBE have plans to open a location in Las Vegas in the next few years.

With Sahara out of the equation, what other resort would SBE partner with to install an Umami Burger? Or more specifically, what Vegas hotel doesn't have an upscale burger joint in their dining mix? My guess - tossed out by Dr. Dave on the Twitter - is Bellagio.


The SBE connection is obvious... perhaps they could carve out a corner of the Hyde Lounge and put it in there? Or they could cut a corner from the cafe or buffet like Wynn did for La Cave?

Great just what vegas needs another over priced burger joint

Maybe Aria, MGM Grand or Caesars. Neither of them have burger joints.

Knowing MGM's penchant for ruining a good thing, they'll probably replace Cafe Bellagio and have Umami's loud music and style clash with the conservatory.

Right when you walk in the casino to the right, there is that casual cafe, that would be a perfect spot.

on the Tweetbox, JohnH mentioned Vdara's Silk Road vacancy as a possible space too... not sure if foot traffic can keep any place alive in that location, but burgers there would theoretically serve city center, bellagio and might bring in some lookers seekers from cosmopolitan.

Somewhere inside CityCenter seems likely.

i heard the silk road spot was going to be for a mr. chow. would hate to see an umami open up inside bellagio. if i wanted to eat at a LA restaurant, I would just stay home. i'm just waiting for a korean taco truck to pop up near the el cortez.

I doubt Mr. Chow is ever going to come to CityCenter... too many rumors at this point. Would love for it to , but it's starting to feel like Montreux or Titanic. Nevvvver gonna happen.
