Scott Conant Scarpetta Las Vegas DOCG Las Vegas

You may know him from Food Network's "Chopped;" you may know that he dislikes red onions with a burning passion; but you don't know Chef Scott Conant, his vision of what an Italian restaurant can and should be, and his opinion on the current state of Las Vegas' restaurant landscape. I was able to stop and chat for a few minutes with this incredibly interesting man who is trying to craft an incredible Italian dining experience for The Cosmopolitan. There's a discussion about his restaurants at the Las Vegas resort, how long it takes him to perfect the experience at one of said restaurants, and what he thinks of a whole host of culinary topics. Plus, get ready for an extra special guest appearance by The Admiral and Blackjacker1979.

i hear scarpetta is huge in LA, with both foodie and scene

Nice interview. He was around last night greeting guests at the hostess stand and checking on people in the dining room. He comes off as a very approachable guy. I can't wait to return to his restaurant.

I did find that he has the least approachable restaurant entrance, though. Kinda worried me because I felt that looking into the other restaurants, Scarpetta was the most low-lit and had the least amount of diners. Also, their sign points toward the elevator bank and not the commons area.
