VegasEats : Botero at Encore Las Vegas

Steve Wynn's Latest Restaurant + Museum Go Round

You Can't Eat Art

Botero (the restaurant) is technically classified as a 'steakhouse' although it isn't a steakhouse in the "Steakhouse" sense. Head chef Mark LoRusso was previously at the helm of Wynn Las Vegas' Tableau. The primary focus here is on steaks, which can be ordered with a number of different treatments, although they have a selection of seafood and poultry dishes as well.

The dining room is a large circular structure which features Botero's Seated Lady set atop a 'floating' platform in a small candlelit pool of water surrounded by tile covered columns. The tile work extends throughout the floor of the restaurant in exquisite design, typical of Wynn & Encore.

We were seated instantly, directly beneath Tiger and Trainer and greeted by our waiter who took our drink orders and made himself available for answering questions related to the menu. Overall, service at Botero was spot on, yet casual and friendly. One interesting feature of the restaurant it's cozy lighting which consisted only of recessed ceiling lights aimed pointed directly at the center of tables from above. It gave the feeling that each table was private, separated by darkness from which wait staff would magically remove or present dishes.

Botero Steak at Encore Las Vegas - Tasting of Crab

Appetizer : Tasting of Crab

(Left) Dungeness crab salad with avocado and bacon. (Right) Roasted Alaskan crab in scampi sauce. We both loved the roasted crab leg in buttery scampi sauce... mouthwatering delicious. The dungeness crab 'salad' was intentionally served cold, which, in retrospect, should not have surprised us as it is described as a 'salad' in the menu. It did make for a strange mix though.

Botero Steak at Encore Las Vegas - Potato Gratin

Gratin Potatoes / Bread Rolls

The gratin potatoes were a bit too gratin... almost to the point of being greasy and very heavy. All sides were served in cast iron pans. The dinner rolls came in four flavors : cranberry, raisin nut, olive and sourdough.
